Easy Pancake Day Delights - Recipe

As Shrove Tuesday approaches, the aroma of freshly made pancakes fills the air. To make this Pancake Day extra special, we've got a quick and easy recipe that will have you flipping perfection onto your plate.

With a generous 29cm diameter, this pan is designed for creating thin and evenly cooked crepes. Crafted from premium quality cast iron, it ensures superior heat retention and distribution, guaranteeing that your crepes are cooked to absolute perfection.

Ingredients:

  • 140g plain flour
  • 200ml whole milk
  • 2 eggs
  • 25g unsalted butter, melted, plus a little extra for greasing

Method:

  1. Sift the flour into a medium-size bowl and add a pinch of salt. Make a well in the middle of the flour. 
  2. In a separate jug, mix together the milk and water.
  3. Break the eggs into the well in the flour and start whisking slowly.
  4. Gradually pour the milk and water mixture into the flour, whisking constantly to incorporate the flour and create a smooth batter.
  5. Once all the ingredients are combined, set the batter aside to rest for 30 minutes. 
  6. After 30 minutes, whisk the melted butter into the batter until fully incorporated.
  7. Heat a non-stick crepe pan or skillet over medium heat.
  8. Lightly grease the pan with melted butter using a pastry brush or paper towel.
  9. Using a ladle or measuring cup, pour roughly 2 tablespoons of batter into the center of the pan.
  10. Quickly tilt the pan in a circular motion to spread the batter evenly and thinly across the bottom of the pan.
  11. Cook the crepe for about 45 seconds on one side, or until golden brown and lacy.
  12. Use a spatula or thin palette knife to carefully flip the crepe over and cook for an additional 30 seconds on the other side.
  13. Slide the cooked crepe out of the pan onto a plate.
  14. Serve immediately with your choice of fillings, such as Nutella and sliced bananas, lemon and sugar, or savoury options like ham and cheese.

Continue cooking crepes with the remaining batter until it is all used up, greasing the pan lightly with butter as needed!
