Crazy Cayenne!

Cayenne peppers are closely related to jalapeno and bell peppers, they are usually moderately hot chilli peppers that are used to flavor dishes. However, few know that it has also been used as a medicine.

If you’re looking to incorporate more Cayenne Peppers in your dishes then try out this Chicken stewed in Cayenne Pepper sauce!

                                            

Ingredients:

  • 3 large tomatoes
  • 2 chicken breasts
  • 2 boneless chicken thighs
  • 2 tablespoons of olive oil
  • 1 small onion chopped finely
  • 2 cranks of Atlantic Sea Salt
  • 4 to 6 garlic cloves finely minced
  • 1 tablespoon of cayenne pepper to taste
  • 1 ½ tablespoons of Spanish Smoked Paprika
  • ½ cup chicken broth

Instructions:

Firstly cut the tomatoes in half and scoop out the seeds and juice. Next cut them into small even-sized pieces and set them aside. Now pat dry the chicken pieces and heat the olive oil in a large pan. Once the pan is hot add the chicken until each piece is browned. Once both sides are cooked remove the pieces and set them aside. Turn the heat to medium and add the onion with a pinch of salt, cook until they are soft and translucent. Next add the minced garlic and saute for 2 minutes, now add the chopped tomato and cook for about 5 minutes. Now add the chicken, cayenne, paprika, a pinch of sea salt and chicken broth to the pan. Give the ingredients a good stir and spread the chicken pieces in an even layer in the pan. Next, cover the pan and turn the heat to medium-low and simmer for 25 minutes. After 25 minutes, uncover the pan and simmer for another 10 minutes. Finally taste the sauce and add if needed any more cayenne or paprika. Service with your choice of rice.
