Smoky BBQ Chicken & Sweet Potato Pie - Recipe

Golden pastry, creamy chicken, sweet roasted potato and plenty of smoky spice. This is the kind of pie that makes you want to get the big serving spoon out.

There's something about a homemade pie when the weather starts getting cooler. It's cosy, comforting and feels like you've made much more effort than you actually have.

Ingredients:

You'll also need a splash of oil and a little milk or beaten egg for the pastry.

Method:

  1. Get the sweet potato going and preheat your oven to 200°C (180°C fan). Place the cubed sweet potato on a baking tray, drizzle with a little oil and sprinkle over a generous twist of Sweet & Smoky BBQ Chargrill Seasoning. Roast for around 15–20 minutes, until starting to soften and caramelise around the edges.
  2. While the sweet potato is roasting, you can start on the filling by heating a splash of oil in a large frying pan and cook the onion for around 5 minutes until soft. Add the shredded chicken, double cream and Sweet 'n Sticky Chicken Shaker. Stir everything together and let it gently bubble for a couple of minutes. Add the roasted sweet potato and carefully fold it through the filling. Finish with a few twists of Seasoned Sea Salt and another little sprinkle of Sweet & Smoky BBQ Seasoning.
  3. Top it with pastry! Spoon the filling into a pie dish and smooth it out. Lay the puff pastry over the top and trim away any excess. Press the edges down and make a couple of small cuts in the middle of the pastry. Brush with a little beaten egg or milk and finish with another twist of Seasoned Sea Salt.
  4. Bake until golden. Pop the pie into the oven for 20–25 minutes, until the pastry is beautifully puffed and golden. Let it sit for five minutes before serving - mainly because the filling will be very hot, but also because it gives you just enough time to get everyone to the table.

This is a pretty hearty pie, so keep the sides simple. A pile of buttery greens, peas or roasted vegetables would be perfect.
