Simple Saffron Rice Dish - Recipe
Saffron is a powerful spice with a sweet, floral taste to it. It’s high price tag can be justified due to its multitude of uses ranging from being used for depression, anxiety, Alzheimer disease, menstrual cramps and PMS. This is due to saffron containing chemicals that alter mood, kill cancer cells, decrease swelling and act as antioxidants. Start incorporating more saffron in your meals to reap these benefits.

Ingredients:
- ¼ cup boiling water
- A pinch of Saffron
- 1 cup basmati rice rinsed
- 1 tablespoon refined coconut oil or butter
- ½ teaspoon onion powder
- ¼ grind Atlantic Sea Salt
- 1 ¾ cup vegetable/chicken stock
Method:
- Combine saffron threads and boiling water and allow to 'steep' for at least 5 minutes.
- In a medium pot, combine saffron + boiling water with the basmati rice and all other ingredients.
- Cover and bring to a boil; reduce heat and simmer (covered) for 15 minutes.
- Remove from heat and let sit for another 10 minutes before serving.
Serve and enjoy!
